Base: mash + green beans

10 dishes, one pair of leftovers

Every plate uses mashed potatoes and green beans. Mushrooms (fresh or soaked dried) are optional but listed where they punch above weight.

1. Diner plate, browned

Mash in a hot skillet with butter until the bottom crusts. Pile green beans next to it, blistered in the same pan with garlic + salt. Gravy or a fried egg on the mash. That’s dinner.

Mushrooms: sauté first, then beans in the fond.

2. Green-bean shepherd pie

Chop beans short. Mix with browned onion, thyme, a splash of stock (and mushrooms if you have them). Spread in a dish, lid of mash, cheese optional. 400°F / 200°C until the peaks brown.

Dried mushrooms: soak, chop, pour soak-liquid into the filling instead of plain stock.

3. Mash croquettes, bean salad

Chill mash, mix a little flour/egg, roll logs, crumb, fry until crisp. Beans stay cold: lemon, olive oil, mustard, toasted nuts. Dip croquette in the bean vinaigrette.

Wet mash won’t hold — fridge 30 min or stir in extra starch.

4. Mash-thickened bean soup

Sweat onion + mushrooms. Add stock, simmer beans until tender. Whisk in mash off heat until it’s a chowder. Pepper, vinegar, herbs. Not a puree of everything — leave beans in pieces.

5. Smash-hash

Cold mash broken into chunks in a screaming pan. Beans cut small, in with mushrooms until charred edges. Flip once. Salt, smoked paprika, hot sauce.

6. Layered gratin

Dish: thin mash → sautéed beans + mushrooms → mash → cream or milk splash → crumbs/parm. Bake until bubbling. Knife should hit a bean layer, not mush soup.

7. Lazy gnocchi + garlicky beans

Mash + flour + pinch salt, roll snakes, cut pillows, boil until they float, then brown in butter. Beans in the brown-butter pan with garlic and lemon zest. Dump pillows in. Pepper.

Too much flour = glue. Add until the dough just isn’t sticky.

8. Stir-fry bowl, mash as sauce

High heat: mushrooms, then beans, soy/garlic/chili. Loosen leftover mash with a spoon of that pan sauce or stock until it’s a gravy. Bowl: mash puddle, beans on top, sesame/scallion.

9. Mash tacos, pickled beans

Warm tortillas. Spread hot mash like refried beans. Quick-pickle or just salt-and-lime the green beans (blanched, shock, toss). Crunch, salsa, cheese. Mushrooms as taco meat if you want bulk.

10. Breakfast nest

Oven-safe skillet: ring of mash, well in the middle, crack egg(s). Beans around the ring with mushrooms. Broil or lid until whites set. Chili crisp or Worcestershire.

If the pantry is empty

You already have mash, beans, mushrooms. Everything else is optional.
